Jamie Oliver Air Fryer Roast Potatoes

Jamie Oliver Air Fryer Roast Potatoes are classic British-style roast potatoes cooked in an air fryer instead of an oven. The potatoes are parboiled, roughed up slightly, then air-fried until crisp and golden, delivering a proper roast texture with less fat.

  • 1 kg floury potatoes (Maris Piper or King Edward)
  • 23 tablespoons olive oil
  • Salt
  • Freshly ground black pepper
  • Optional: garlic cloves, rosemary, or thyme

Instructions

Step 1: Prepare the potatoes

Peel the potatoes and cut them into evenly sized chunks. Even sizing ensures they cook and crisp at the same rate.

Step 2: Parboil

Place the potatoes in a large pot of salted cold water. Bring to the boil and simmer for 8–10 minutes until the edges are soft but the centres still hold their shape. Drain thoroughly.

Step 3: Rough up the edges

Return the drained potatoes to the pot, place the lid on, and shake gently. This roughens the edges, which is key to creating a crisp exterior during air frying.

Step 4: Season and oil

Transfer the potatoes to a bowl. Drizzle with olive oil, season generously with salt and black pepper, and toss until evenly coated. Add herbs or garlic if using.

Step 5: Preheat the air fryer

Preheat the air fryer to 190°C for 3–4 minutes. Preheating helps the potatoes start crisping immediately.

Step 6: Air fry

Place the potatoes in the air fryer basket in a single layer. Cook for 20–25 minutes, shaking the basket halfway through to ensure even browning.

Step 7: Final crisp

For extra crunch, increase the temperature to 200°C for the final 5 minutes. This gives the potatoes a deeper golden colour and firmer crust.

Step 8: Rest and serve

Remove the potatoes and let them rest for 2 minutes. This allows the crust to settle before serving.
