    • 1 lemon (zest + juice)

    • Fresh parsley (small handful)

    • Olive oil

Step 1: Prep the Ingredients

    1. Pat the prawns dry with a paper towel.

    1. Slice garlic thinly (not crushed — it burns easily).

    1. Finely chop chilli.

    1. Zest the lemon and keep the juice ready.

    1. Chop parsley leaves.

Tip: Preparation first, cooking later — prawns cook too quickly to multitask.

Step 2: Heat the Pan Properly

    1. Place a large frying pan on medium-high heat.

    1. Add 2 tablespoons olive oil.

    1. Wait until oil shimmers (about 30 seconds).

Hot pan = sear, not steam.
