Jamie Oliver’s 5 Ingredients Lamb Shoulder recipe is a slow-roasted lamb dish made with lamb shoulder, herbs, garlic, olive oil, and lemon. It’s roasted low and slow until tender, creating a flavour-packed roast with minimal effort.
Set your oven to 160°C (320°F) for slow, even cooking.
Rub the lamb generously with olive oil, garlic, lemon zest, salt, and pepper.
Place rosemary sprigs under and over the lamb. Add lemon wedges into the roasting tray for extra aroma.
Add a small splash of water or stock to prevent the base from drying out.
Cover tightly with foil and roast for 3½ to 4 hours until the lamb is soft enough to pull apart.
Remove the foil and roast uncovered for the last 20–30 minutes to create a golden, caramelised crust.
Let the lamb rest for 15 minutes before carving or shredding.
