    • 1 lamb shoulder (22.5 kg), bone-in

    • 4 cloves garlic, smashed

    • 2 sprigs rosemary

    • Olive oil

    • 1 lemon (zest + wedges for roasting)

Instructions

1. Preheat the Oven

Set your oven to 160°C (320°F) for slow, even cooking.

2. Season the Lamb Shoulder

Rub the lamb generously with olive oil, garlic, lemon zest, salt, and pepper.

3. Add Herbs and Lemon

Place rosemary sprigs under and over the lamb. Add lemon wedges into the roasting tray for extra aroma.

4. Prepare the Roasting Tray

Add a small splash of water or stock to prevent the base from drying out.

5. Slow Roast the Lamb

Cover tightly with foil and roast for 3½ to 4 hours until the lamb is soft enough to pull apart.

6. Brown the Top

Remove the foil and roast uncovered for the last 20–30 minutes to create a golden, caramelised crust.

7. Rest and Serve

Let the lamb rest for 15 minutes before carving or shredding.
