Jamie Oliver’s chickpeas and chicken is a simple one-pan dish where chicken is cooked alongside chickpeas and a few key flavoring ingredients, creating a hearty, protein-rich meal with minimal preparation.

  • 4 chicken thighs or breasts
  • 2 cans (400g each) chickpeas (drained and rinsed)
  • 2 tablespoons olive oil
  • 2 teaspoons paprika or mixed spices
  • 1 lemon (juice and zest)

Optional additions:

  • Garlic cloves
  • Fresh herbs (parsley or coriander)
  • Chili flakes

Instructions

Step 1: Preheat and Prepare

Preheat your oven to 200°C (400°F). Pat the chicken dry and season with salt, pepper, and paprika.

Step 2: Sear the Chicken

Heat olive oil in an oven-safe pan. Place chicken skin-side down and cook until golden and crispy.

Step 3: Add Chickpeas

Turn the chicken over and add chickpeas to the pan, spreading them evenly.

Step 4: Add Flavor

Drizzle lemon juice and zest over the chicken and chickpeas. Add garlic if using.

Step 5: Roast

Transfer the pan to the oven and roast for 20–25 minutes until chicken is fully cooked and chickpeas are slightly crisp.

Step 6: Serve

Remove from oven, garnish with fresh herbs, and serve hot.
