    •  sirloin or ribeye steaks (about 250 g each)

    • Olive oil

    • Sea salt and freshly ground black pepper

    • 1 clove garlic, lightly crushed

    • Small knob of butter

    • Fresh rosemary or thyme

    • Optional quick sides: cherry tomatoes, spinach, mushrooms, or a simple salad

Instructions

Step 1: Prepare the steak

Remove the steaks from the fridge a few minutes before cooking. Pat dry with kitchen paper, then season generously with salt and black pepper on both sides.

Step 2: Heat the pan

Place a heavy pan or griddle over high heat. Let it get properly hot. Add a small drizzle of olive oil and swirl to coat.

Step 3: Sear the steak

Lay the steaks into the hot pan. Cook for 2–3 minutes per side for medium-rare, turning once. Don’t move them around—this helps build a good crust.

Step 4: Add flavour

In the final minute, add the butter, crushed garlic, and herbs. Tilt the pan and spoon the melted butter over the steaks to boost flavour.

Step 5: Rest the meat

Remove the steaks from the pan and rest for 3–5 minutes. This step keeps the steak juicy and tender.

Step 6: Serve

Slice against the grain or serve whole with quick sides prepared while the steak rests.
