Jamie Oliver Zucchini Soup

Jamie Oliver’s Zucchini Soup is a simple, blended vegetable soup made from sautéed zucchini, onions, garlic, and herbs simmered in stock, then blended until velvety smooth. It’s a light yet satisfying soup with a naturally creamy texture.

Ingredients

    • 4 medium zucchini (courgettes), sliced

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 2 medium potatoes, diced (for creaminess)

    • 4 cups vegetable stock

    • 2 tbsp olive oil or butter

    • A handful of fresh basil or parsley

    • Salt and pepper to taste

    • Optional: ½ cup cream, milk, or coconut milk

Instructions

Step 1: Sauté onions and garlic

Cook in olive oil until soft and fragrant to build your flavour base.

Step 2: Add potatoes and zucchini

Stir well and allow the vegetables to soften slightly.

Step 3: Pour in vegetable stock

Bring to a simmer so the vegetables cook evenly.

Step 4: Cook until tender

Simmer 12–15 minutes until potatoes and zucchini are soft enough to blend.

Step 5: Blend the soup until smooth

Use a blender or hand blender to create a silky, creamy texture.

Step 6: Add herbs and optional cream

Stir through fresh herbs and cream for flavour and richness.

Step 7: Adjust seasoning and serve warm

Taste, season, and enjoy with your favourite toppings.
