The Jamie Oliver Zucchini Fritters are small, pan-fried patties made from grated zucchini mixed with binding ingredients like egg and flour, then cooked until crisp and golden.

    • 2 medium zucchini (coarsely grated)

    • 2 large eggs

    • 60 g plain flour

    • 40 g grated parmesan or feta

    • 2 tbsp chopped fresh parsley

    • 1 clove garlic (minced)

    • Salt and freshly ground black pepper

    • 3 tbsp olive oil (for frying)

Optional:

    • Pinch chilli flakes

    • Lemon zest

    • Greek yoghurt for serving

Instructions

Step 1: Remove Excess Moisture

Place grated zucchini in a bowl and sprinkle lightly with salt.

Let sit for 10 minutes to draw out moisture.

Squeeze firmly using clean hands or a kitchen towel.

Removing moisture is essential for crisp fritters.

Step 2: Prepare the Batter

In a mixing bowl, combine drained zucchini, eggs, flour, cheese, parsley, garlic, salt, and pepper.

Mix gently until evenly combined.

The batter should be thick enough to hold its shape but not overly stiff.

Step 3: Heat the Pan Properly

Heat olive oil in a large non-stick pan over medium heat.

Ensure oil is hot before adding batter to prevent sticking.

Step 4: Fry Until Golden

Spoon small portions of mixture into the pan and flatten slightly.

Cook for 3–4 minutes per side until golden brown.

Avoid overcrowding the pan.

Step 5: Drain and Serve

Transfer fritters to paper towels to remove excess oil.

Serve warm with yoghurt or a squeeze of lemon.
