Jamie Oliver Winter Vegetable Soup

Jamie Oliver’s Winter Vegetable Soup is a simple one-pot recipe made with root vegetables, aromatics, herbs, and stock. The vegetables simmer until soft, then blend partly or fully to create a thick, warming soup suitable for lunch, dinner, or batch cooking.

    • 2 carrots, peeled and chopped

    • 2 parsnips, peeled and chopped

    • 1 leek, sliced

    • 1 medium potato, diced

    • 1 small butternut squash, peeled and cubed

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 1.2 litres vegetable or chicken stock

    • 2 tbsp olive oil

    • 1 tsp dried thyme or mixed herbs

    • Salt and black pepper, to taste

    • Fresh parsley, for topping

    • Lemon juice (optional), for brightness

Instructions

Step 1: Sauté the Base

Heat olive oil in a large pot and sauté the onion, garlic, and leek until soft and fragrant.

Step 2: Add the Root Vegetables

Add carrots, parsnips, potatoes, and squash. Stir well to coat the vegetables in the aromatics.

Step 3: Add Stock and Seasoning

Pour in the stock and add thyme, salt, and pepper. Bring everything to a gentle boil.

Step 4: Simmer Until Tender

Reduce heat and simmer for 25–30 minutes until all vegetables are completely soft.

Step 5: Blend the Soup

Blend partially for a chunky texture or blend fully for a smooth, velvety soup.

Step 6: Adjust Flavour

Taste and adjust with extra salt, pepper, or a squeeze of lemon for brightness.

Step 7: Serve Warm

Ladle into bowls and top with parsley, olive oil, or croutons.
