Jamie Oliver Turkey Soup is a flavourful broth-based soup made by simmering shredded turkey with vegetables like carrots, celery, onions, and garlic. It’s seasoned with herbs and cooked until tender, creating a light, wholesome soup that’s perfect for using up leftover turkey.

    • 2 cups leftover turkey, shredded

    • 1 onion, chopped

    • 2 carrots, sliced

    • 2 celery sticks, chopped

    • 2 cloves garlic, minced

    • 2 tablespoons olive oil or butter

    • 1 litre chicken or turkey stock

    • 1 bay leaf

    • 1 teaspoon dried thyme

    • 1 cup diced potatoes or cooked noodles (optional)

    • Salt and pepper to taste

    • Fresh parsley for garnish

    • Optional: lemon juice for added freshness

Instructions

1. Sauté the Vegetables

Heat oil or butter in a large pot. Add onions, carrots, celery, and garlic. Cook for 5–7 minutes until they soften and become fragrant.

2. Add the Seasoning and Stock

Sprinkle in dried thyme and add the bay leaf. Pour in the turkey or chicken stock and stir well.

3. Stir in the Turkey

Add the shredded leftover turkey and let it heat gently in the broth.

4. Add Potatoes or Noodles (Optional)

For a heartier version, add diced potatoes and simmer for 15 minutes until tender. If using noodles, add them during the last 5 minutes so they don’t become mushy.

5. Simmer and Blend Flavours

Let the soup simmer for 20–25 minutes until the vegetables are soft and the broth becomes flavourful.

6. Finish and Serve

Season with salt and pepper, stir in chopped parsley, and add a splash of lemon juice if you want extra freshness. Serve warm.
