Jamie Oliver’s turkey gravy is a homemade gravy made using roasted vegetables, turkey drippings, flour, and stock.
It’s known for its deep colour, bold taste, and velvety texture that complements roasted meats beautifully.
Place onions, carrots, celery, bay leaves, and herbs in the roasting tray under the turkey before cooking. They’ll caramelise and absorb the turkey juices.
Once the turkey is done, lift it out of the tray. Put the tray on the stove over medium heat and mash the vegetables to release flavour.
Sprinkle flour over the tray and stir well. Cook for 2–3 minutes to help the gravy thicken without tasting floury.
Slowly add stock while stirring, scraping up any browned bits from the tray. Simmer for 10–15 minutes until slightly reduced.
Pour the mixture through a sieve, pressing vegetables firmly to extract maximum flavour. Return the strained gravy to the pan.
Add salt, pepper, and optional extras like butter, cranberry sauce, or wine. Simmer gently until the gravy reaches your desired consistency.
Serve over turkey slices, mashed potatoes, stuffing, or roasted vegetables.
