Jamie Oliver stuffed mushrooms are oven-baked mushrooms filled with a savoury mixture, often made with herbs, breadcrumbs, cheese, and aromatics.
They are cooked until tender and golden, creating a dish that is rich, satisfying, and perfect for sharing.
Preheat the oven to 190°C (170°C fan). Gently clean the mushrooms and remove the stems. Finely chop the stems and set aside.
Heat olive oil in a pan and gently sauté the chopped mushroom stems, garlic, and onion until soft and fragrant. This builds the base flavour.
Remove from heat and mix in breadcrumbs, herbs, cheese, lemon zest, salt, and pepper. Stir until the mixture holds together but is not wet.
Place the mushroom caps on a baking tray and spoon the filling generously into each one, pressing lightly so it sits well.
Drizzle lightly with olive oil and bake for 20–25 minutes, until the mushrooms are tender and the tops are golden.
Serve hot with a fresh herb garnish or a light squeeze of lemon.
