  • 800 g chicken thighs or breast, cut into chunks
  • 3 tablespoons olive oil
  • Zest and juice of 1 lemon
  • 3 cloves garlic, finely grated
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper
  • Optional: wooden or metal skewers

Instructions

Step 1: Prepare the marinade

In a large bowl, mix the olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt, and black pepper. Stir well until everything is evenly combined and aromatic.

Step 2: Marinate the chicken

Add the chicken pieces to the bowl and toss thoroughly so every piece is coated. Cover and let it marinate for 20–30 minutes. This time allows the flavours to absorb without breaking down the meat.

Step 3: Skewer or portion

Thread the marinated chicken onto skewers if using, leaving a little space between pieces for even cooking. If not using skewers, keep the chicken ready in the bowl.

Step 4: Preheat the cooking surface

Heat a grill pan, barbecue, or large frying pan over medium-high heat. Let it get properly hot before adding the chicken.

Step 5: Cook the chicken

Cook the chicken for 10–12 minutes, turning regularly. The outside should develop light charring while the inside stays juicy and fully cooked.

Step 6: Rest briefly

Remove the chicken from the heat and let it rest for 3–4 minutes. This keeps the juices inside and improves texture.

Step 7: Final seasoning

Taste and adjust seasoning if needed. A small squeeze of fresh lemon just before serving sharpens the flavour.
