Jamie Oliver’s Slow Cooker Lamb Shanks is a low-and-slow braised lamb recipe where shanks simmer in tomatoes, stock, herbs, and vegetables until they become tender and fall off the bone.   • 4 lamb shanks
  • 2 onions, sliced
  • 3 carrots, chopped
  • 2 celery sticks, chopped
  • 4 cloves garlic, crushed
  • 1 × 400g can chopped tomatoes
  • 1 tablespoon tomato paste
  • 500ml beef stock
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

Step 1: Brown the Lamb Shanks for Extra Flavour

Heat olive oil in a pan and brown the lamb shanks on all sides. This step boosts flavour and caramelises the edges, giving the stew depth. Transfer the browned shanks to the slow cooker.

Step 2: Sauté Vegetables to Build the Aroma

In the same pan, cook onions, carrots, celery, and garlic until soft and lightly golden. Sweating the vegetables enhances sweetness and enriches the final gravy.

Step 3: Add Tomatoes, Herbs, and Stock

Stir in tomato paste, chopped tomatoes, rosemary, thyme, and bay leaves. Pour in beef stock and bring to a gentle simmer. This mixture forms the core of the sauce and ensures the shanks stay moist during cooking.

Step 4: Slow Cook Until Tender

Pour everything into the slow cooker over the lamb shanks. Cook on LOW for 7–8 hours or HIGH for 4–5 hours until the meat is falling off the bone and the sauce has thickened naturally.

Step 5: Serve With Your Favourite Sides

Taste and adjust seasoning, then serve the lamb shanks with mashed potatoes, polenta, rice, or crusty bread. Spoon plenty of the rich gravy over each serving for the best experience.
