Jamie Oliver’s Salmon Tray Bake is a quick one-pan recipe where salmon, vegetables, herbs, and a citrus dressing roast together until tender and flavorful. It’s designed as a fast, fuss-free dinner that feels fresh, vibrant, and satisfying.

    • 4 salmon fillets (skin on or off)

    • 1 red pepper, sliced

    • 1 yellow pepper, sliced

    • 1 red onion, cut into wedges

    • 1 courgette (zucchini), sliced

    • 200g cherry tomatoes

    • 2 cloves garlic, crushed

    • 1 lemon, sliced

    • 3 tbsp olive oil

    • Salt and black pepper, to taste

    • 1 tsp smoked paprika (optional)

    • Fresh parsley or basil, chopped

    • 1 tbsp lemon juice for serving

Instructions

Step 1: Preheat Your Oven

Set your oven to 200°C (400°F) so it reaches full temperature while you prepare the ingredients.

Step 2: Prepare the Vegetables

Place the peppers, onions, courgettes, cherry tomatoes, and garlic onto a large baking tray. Drizzle with olive oil and sprinkle with salt, pepper, and paprika.

Step 3: Roast the Vegetables

Roast the vegetables for 10–12 minutes until they start to soften.

Step 4: Add the Salmon Fillets

Remove the tray from the oven and place the salmon fillets on top of the vegetables. Add lemon slices around the tray.

Step 5: Season the Salmon

Drizzle olive oil over the fillets and season generously with salt and pepper.

Step 6: Continue Baking

Place the tray back in the oven and roast for another 12–15 minutes until the salmon is cooked through and flakes easily.

Step 7: Finish and Serve

Sprinkle fresh herbs and a squeeze of lemon juice over the salmon just before serving for extra brightness.
