Jamie Oliver’s Red Cabbage Slaw is a simple shredded cabbage salad tossed with carrots, herbs, and a tangy dressing. It highlights freshness and crunch, with a balance of acidity and sweetness that pairs well with rich or spicy dishes.

  • ½ medium red cabbage, finely shredded
  • 2 carrots, grated or julienned
  • 1 small red onion, thinly sliced
  • A handful of fresh parsley or coriander, chopped
  • 2 tbsp olive oil
  • 12 tbsp apple cider vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or sugar
  • Salt and pepper to taste

Instructions

1. Prepare the Vegetables

Finely shred the red cabbage using a sharp knife or mandoline. Grate the carrots and slice the onion thinly to ensure even texture and flavour distribution.

2. Make the Dressing

In a small bowl, whisk together olive oil, vinegar or lemon juice, mustard, honey, salt, and pepper. The dressing should taste bright and balanced, not too sharp.

3. Toss Everything Together

Place the cabbage, carrot, onion, and herbs in a large bowl. Pour the dressing over and toss thoroughly until all vegetables are coated.

4. Rest for Better Flavour

Let the slaw sit for at least 10 minutes before serving. This softens the cabbage slightly and allows flavours to meld without losing crunch.
