Jamie Oliver One Pan Spicy Chicken is a simple oven-roasted or skillet-cooked meal where chicken pieces are seasoned with spices and cooked together with vegetables in a single pan until tender and slightly caramelised.

The technique relies on high heat roasting and flavour layering.

  • 6 chicken thighs or drumsticks
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chilli flakes (adjust to taste)
  • 2 cloves garlic (minced)
  • 1 red pepper (sliced)
  • 1 onion (sliced)
  • 2 potatoes (cubed)
  • Salt and freshly ground black pepper

Optional:

  • Fresh parsley
  • Lemon wedges
  • 1 tsp cumin

Instructions

Step 1: Preheat and Prepare Ingredients

Preheat oven to 200°C.

Pat the chicken dry with kitchen paper.

Dry skin helps achieve a crisp finish.

Step 2: Season the Chicken

In a bowl, mix olive oil, paprika, chilli flakes, garlic, salt, and pepper.

Rub this mixture evenly over the chicken.

Ensure the seasoning coats both sides.

Step 3: Prepare the Vegetables

Place sliced peppers, onion, and cubed potatoes in a roasting tray.

Drizzle lightly with olive oil and season with salt and pepper.

Spread evenly so they roast rather than steam.

Step 4: Arrange and Roast

Place seasoned chicken on top of the vegetables.

Roast for 35–40 minutes until chicken is golden and cooked through.

The internal temperature should reach 75°C.

Step 5: Rest and Serve

Remove from oven and allow the chicken to rest for 5 minutes.

Garnish with parsley and serve with lemon wedges.

Resting helps the juices settle.
