You’ll need the following ingredients:

  • 4 chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 200 g mushrooms, sliced
  • 1 can chopped tomatoes
  • ½ cup chicken stock
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme or rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

Step 1 – Season the Chicken

Season the chicken with salt and pepper on both sides.

Step 2 – Brown the Chicken

Heat olive oil in a large pan over medium heat. Add the chicken and cook until golden brown on both sides. Remove and set aside.

Step 3 – Cook the Vegetables

In the same pan, add the onion and garlic. Cook for 3–4 minutes until softened. Add the mushrooms and cook until they release their moisture and become golden.

Step 4 – Add Tomatoes and Liquid

Stir in the chopped tomatoes and stock. Mix well and bring to a simmer.

Step 5 – Add Herbs and Chicken

Add the herbs and return the chicken to the pan. Spoon the sauce over the chicken.

Step 6 – Simmer the Dish

Cover and cook for 25–30 minutes until the chicken is tender and fully cooked.

Step 7 – Finish and Serve

Garnish with fresh parsley and serve hot.
