Jamie Oliver Lamb Stew

Jamie Oliver’s Lamb Stew is a classic, slow-cooked dish made with chunks of lamb simmered with onions, carrots, celery, potatoes, and herbs in a flavourful broth. It’s cooked until the lamb becomes tender and the stew thickens into a rich, comforting meal.

Ingredients

  • 800g lamb shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery sticks, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato purée
  • 1 litre beef or lamb stock
  • 1 bay leaf
  • 1 teaspoon dried thyme or rosemary
  • 3 potatoes, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: ½ cup pearl barley for added texture

Instructions

1. Brown the Lamb

Heat olive oil in a large pot. Brown the lamb chunks on all sides to build flavour. Remove and set aside.

2. Sauté the Vegetables

In the same pot, sauté onion, carrots, and celery until softened. Add garlic and cook briefly.

3. Add Tomato Purée and Herbs

Stir in the tomato purée, bay leaf, and thyme. Cook for a minute to develop richness.

4. Add Lamb Back Into the Pot

Return the browned lamb to the pot and stir to coat with the aromatics.

5. Pour in the Stock

Add the stock and bring to a simmer.

6. Add Potatoes

Stir in the potatoes and reduce the heat to low.

7. Slow Cook the Stew

Cover and simmer for 1½ to 2 hours until the lamb is tender and the stew thickens.

8. Finish and Serve

Season well, garnish with fresh parsley, and serve warm.
