Jamie Oliver’s Instant Pickled Onion is a quick-pickled condiment made by soaking thinly sliced onions in vinegar, sugar, and salt. The onions soften within minutes and absorb a sharp, sweet, tangy flavour that enhances many dishes.

    • 1 large red onion, thinly sliced

    • 100 ml apple cider vinegar

    • 1 tbsp sugar

    • 1 tsp salt

    • Optional: pinch of chilli flakes

    • Optional: squeeze of lemon juice

    • Optional: peppercorns or mustard seeds for extra flavour

Instructions

Step 1: Slice the Onion Thinly

Use a sharp knife or mandoline to get very thin slices. Thin slices absorb the flavour quickly and pickle more evenly.

Step 2: Mix the Pickling Liquid

Combine vinegar, sugar, and salt in a bowl. Stir well until the sugar dissolves to create a balanced brine.

Step 3: Add the Onions to the Brine

Place the sliced onions into the mixture, making sure they’re fully submerged for even pickling.

Step 4: Let It Sit for 10 Minutes

Allow the onions to soften and turn bright pink. The flavour intensifies as they rest.

Step 5: Taste and Adjust

Add lemon juice, chilli flakes, or extra sugar depending on your preferred balance of tang and sweetness.
