Jamie Oliver’s Harissa Chicken is a Middle Eastern–inspired roasted chicken dish coated in harissa paste, often roasted with vegetables like peppers, onions, and potatoes. The result is a spicy, aromatic meal that’s simple to prepare and full of bold flavour.

    • 6 chicken thighs or drumsticks

    • 2 tbsp harissa paste

    • 2 tbsp olive oil

    • 1 lemon (zest + juice)

    • 3 garlic cloves, minced

    • 1 tsp honey or maple syrup

    • 1 onion, sliced

    • 2 bell peppers, sliced

    • 2 potatoes or sweet potatoes, cubed

    • Salt and pepper to taste

    • Fresh parsley or coriander to garnish

Instructions

Step 1: Prepare the marinade

Mix the harissa paste, olive oil, lemon juice, garlic, honey, salt, and pepper into a smooth coating.

Step 2: Coat the chicken thoroughly

Rub the marinade over the chicken until fully covered for deep flavour.

Step 3: Marinate for at least 20 minutes

Let the flavours soak in; longer marination enhances taste.

Step 4: Add vegetables to a baking tray

Spread peppers, onions, and potatoes evenly.

Step 5: Place chicken pieces on top

This allows the juices to drip down and flavour the vegetables.

Step 6: Roast at 200°C for 35–45 minutes

Bake until chicken is golden, tender, and fully cooked.

Step 7: Garnish and serve

Top with fresh herbs and extra lemon juice if desired.
