Jamie Oliver Fish Stew is a quick-cooked seafood stew where fish is gently simmered in a flavorful tomato-based broth with herbs and vegetables.

You’ll need the following ingredients:

    • 500 g mixed fish fillets (cod, salmon, or haddock)

    • 1 tablespoon olive oil

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 1 can chopped tomatoes

    • 1 cup fish or vegetable stock

    • 1 teaspoon paprika

    • ½ teaspoon chili flakes (optional)

    • Salt and black pepper to taste

    • Fresh parsley or basil, chopped

    • Juice of ½ lemon

Instructions

Step 1 – Prepare the Fish

Cut the fish into large chunks and set aside. Keeping pieces large helps prevent them from breaking apart.

Step 2 – Cook the Base

Heat olive oil in a large pan over medium heat. Add the onion and garlic and cook for 3–4 minutes until softened and fragrant.

Step 3 – Add Tomatoes and Spices

Stir in the chopped tomatoes, paprika, chili flakes, salt, and pepper. Mix well and cook for 2 minutes.

Step 4 – Add the Stock

Pour in the fish or vegetable stock and bring the mixture to a gentle simmer.

Step 5 – Cook the Fish

Add the fish pieces to the pan and simmer gently for 6–8 minutes until the fish is cooked through and tender.

Step 6 – Finish and Serve

Add lemon juice and fresh herbs, then serve immediately.
