Jamie Oliver’s Creamed Spinach is a creamy spinach dish made by wilting fresh spinach and cooking it in a velvety sauce of butter, garlic, cream, and seasoning. It’s smooth, rich, and comforting, turning leafy greens into a savoury treat.
Heat a large pan over medium heat. Add the spinach in batches and allow it to wilt down. Remove any excess water by pressing gently or draining well.
In the same pan, melt butter and gently sauté the garlic until fragrant but not browned. This step creates the foundation of flavour for the entire dish.
Pour in the double cream and stir well. Add a pinch of nutmeg, salt, and black pepper. Let the sauce simmer for a couple of minutes until slightly thickened.
Add the wilted spinach back into the pan and stir until fully coated. Simmer for another 2–3 minutes so the flavours blend together and the sauce becomes velvety.
If the mixture seems too thick, add a splash of cream or milk. For a smoother version, roughly chop the spinach before mixing. Serve warm as a classic side dish.
