Jamie Oliver Cinnamon Rolls

Jamie Oliver’s Cinnamon Rolls are a homemade sweet roll recipe made with enriched dough, filled with cinnamon, sugar, and butter, then baked until golden and topped with a simple glaze. They are warm, fragrant, and perfect for breakfast or dessert.

For the Dough:

  • 500g strong white bread flour
  • 7g instant yeast
  • 300ml warm milk
  • 1 large egg
  • 50g butter, melted
  • 3 tablespoons sugar
  • Pinch of salt

For the Filling:

  • 75g butter, softened
  • 100g brown sugar
  • 2 tablespoons ground cinnamon

For the Glaze (optional but classic):

  • 120g icing sugar
  • 2 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

1. Prepare the Dough

Mix warm milk, yeast, and sugar in a bowl. Let it sit for 5 minutes until frothy.

2. Add Remaining Dough Ingredients

Stir in the egg, melted butter, salt, and flour. Mix until a soft dough forms.

3. Knead the Dough

Knead by hand or stand mixer for 8–10 minutes until smooth and elastic.

4. First Rise

Place the dough in a greased bowl, cover it, and let it rise for 1–1½ hours until doubled.

5. Prepare the Filling

Mix softened butter, cinnamon, and brown sugar into a paste.

6. Roll Out the Dough

Punch down the risen dough and roll it into a large rectangle.

7. Spread the Filling

Cover the surface with the cinnamon-sugar mixture.

8. Roll and Slice

Roll the dough into a tight log and slice into 10–12 even rolls.

9. Second Rise

Arrange rolls in a greased tray, cover, and let rise again for 30 minutes.

10. Bake the Cinnamon Rolls

Bake at 180°C (350°F) for 20–25 minutes until golden.

11. Glaze and Serve

Drizzle with icing while warm and enjoy soft, gooey rolls.
