For the Cake

    • 200 g plain flour

    • 200 g caster sugar

    • 200 g unsalted butter, softened

    • 4 eggs

    • 50 g cocoa powder

    • 2 teaspoons baking powder

    • 1 teaspoon vanilla extract

    • 34 tablespoons milk

For the Fudge Frosting

    • 200 g dark chocolate

    • 150 ml double cream

    • 50 g butter

    • 2 tablespoons icing sugar (optional)

Instructions

Step 1 – Preheat and Prepare

Preheat your oven to 180°C (350°F). Grease and line two round cake tins.

Step 2 – Make the Cake Batter

In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

Step 3 – Add Dry Ingredients

Sift in the flour, cocoa powder, and baking powder. Gently fold the mixture together, then add vanilla extract and milk to loosen the batter.

Step 4 – Bake the Cakes

Divide the batter evenly between the tins and bake for 20–25 minutes until a skewer inserted in the center comes out clean. Let the cakes cool completely.

Step 5 – Prepare the Fudge Frosting

Melt the dark chocolate, cream, and butter together in a heatproof bowl over simmering water or in the microwave. Stir until smooth and glossy. Let it cool slightly to thicken.

Step 6 – Assemble the Cake

Place one cake layer on a serving plate. Spread a generous amount of fudge frosting over the top. Add the second layer and cover the entire cake with the remaining frosting.

Step 7 – Finish and Serve

Smooth the frosting with a spatula or create swirls for a rustic look. Slice and serve.
