Jamie Oliver’s chocolate and strawberry cake is a layered or single-round chocolate sponge cake filled and topped with fresh strawberries and a light chocolate or cream-based frosting.

It combines rich cocoa notes with fresh fruit to create a cake that feels indulgent yet balanced.

Ingredients

    • Unsalted butter, softened

    • Caster sugar

    • Eggs

    • Self-raising flour

    • Cocoa powder

    • Baking powder

    • Milk

    • Vanilla extract

    • Dark chocolate, melted

    • Fresh strawberries

    • Double cream or chocolate frosting (for filling and topping)

Instructions

Follow these steps carefully to achieve a soft crumb and even bake.

Step 1: Prepare the Cake Tin

Preheat the oven to 180°C (160°C fan). Grease and line a round cake tin with baking paper to prevent sticking.

Step 2: Cream Butter and Sugar

Beat the butter and caster sugar together until pale and fluffy. This step helps create a light sponge.

Step 3: Add Eggs and Flavour

Beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.

Step 4: Mix the Dry Ingredients

Sift together the flour, cocoa powder, and baking powder. Fold gently into the mixture, alternating with milk, until smooth.

Step 5: Add Melted Chocolate

Pour in the melted dark chocolate and fold carefully to keep the batter airy.

Step 6: Bake the Cake

Transfer the batter to the prepared tin and bake for 30–35 minutes, or until a skewer inserted into the center comes out clean. Cool completely before decorating.

Step 7: Assemble and Decorate

Slice the cake if layering. Spread cream or frosting over the cake, add sliced strawberries, and finish with more strawberries on top.
