Jamie Oliver Chicken Pie (30-Minute Meals)

Jamie Oliver’s Chicken Pie is a speedy version of the classic British comfort dish, made with cooked chicken pieces, soft leeks, creamy sauce, fresh herbs, and a crisp puff pastry top. It’s designed to be quick, hearty, and full of flavour.

For the Filling

    • 500g cooked or raw chicken breast/thighs, diced

    • 1 large leek, sliced

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 150g mushrooms, sliced (optional)

    • 1 tbsp olive oil

    • 1 tbsp butter

    • 2 tbsp plain flour

    • 300ml chicken stock

    • 150ml cream or milk

    • Salt and black pepper, to taste

    • Fresh thyme or parsley

For the Topping

    • 1 sheet puff pastry

    • 1 egg, beaten (for brushing)

Instructions

Step 1: Sauté the Vegetables

Heat oil and butter in a large pan. Cook onions, leeks, and garlic until soft and fragrant, adding mushrooms if using.

Step 2: Add the Chicken

Stir in chicken pieces. If raw, cook until lightly browned; if cooked, warm through gently.

Step 3: Create the Sauce

Sprinkle flour over the mixture and stir for a minute. Pour in chicken stock and cream, then simmer until thick and smooth.

Step 4: Season and Add Herbs

Add salt, pepper, and plenty of fresh herbs. The sauce should be creamy and well-seasoned.

Step 5: Transfer to a Baking Dish

Pour the filling into an ovenproof dish, spreading it evenly.

Step 6: Add the Pastry Top

Lay puff pastry over the dish, trimming edges if needed. Brush with beaten egg for a glossy finish.

Step 7: Bake Until Golden

Bake at 200°C (400°F) for 15–18 minutes, or until the pastry is puffed and golden brown.

Step 8: Rest and Serve

Let the pie sit for a few minutes so the filling thickens before serving.
