Jamie Oliver’s Chicken Pasta 15 Minute Meals dish is a fast-cooked chicken pasta where sliced chicken is pan-fried with garlic and herbs, then combined with cooked pasta and a light sauce. It focuses on timing, preparation, and bold but simple flavour rather than slow cooking.

  • 400 g pasta (penne, fusilli, or spaghetti)
  • 2 tablespoons olive oil
  • 500 g chicken breast, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried oregano or mixed herbs
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 50 g grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Small handful of fresh parsley or basil, chopped

Instructions

Step 1: Cook the pasta

Bring a large pot of salted water to the boil and cook the pasta according to packet instructions. Reserve a small cup of pasta cooking water before draining.

Step 2: Start the chicken

While the pasta cooks, heat olive oil in a large frying pan over high heat. Add the sliced chicken in a single layer and season lightly with salt and pepper. Cook for 3–4 minutes, turning once, until golden and cooked through.

Step 3: Add garlic and herbs

Reduce the heat slightly and add the garlic and dried herbs to the pan. Stir for about 30 seconds until fragrant, taking care not to let the garlic burn.

Step 4: Bring everything together

Add the drained pasta to the pan with the chicken. Toss well, adding a splash of reserved pasta water to loosen everything and help form a light sauce.

Step 5: Finish with lemon and cheese

Add lemon zest, lemon juice, and most of the Parmesan. Toss again until the pasta looks glossy and evenly coated.

Step 6: Final seasoning and serve

Taste and adjust seasoning. Sprinkle with fresh herbs and the remaining Parmesan before serving.
