Add the cumin, coriander, turmeric, chilli powder, and tomato paste. Stir well, then add the chopped tomatoes and cook for 2 minutes.
Pour in the chicken stock and stir to combine, forming a thick curry sauce.
Return the chicken to the pan and simmer for 8–10 minutes until the chicken is fully cooked and coated with the sauce.
Finish with garam masala, lemon juice, and fresh cilantro before serving.
