Jamie Oliver Chicken Jalfrezi is a stir-fried chicken curry cooked with onions, bell peppers, tomatoes, and aromatic spices. The ingredients are cooked quickly over high heat to maintain their texture while absorbing the spicy sauce.

The result is a bold, colourful curry with tender chicken and crisp vegetables in a rich tomato-based sauce.

You’ll need the following ingredients:

    • 500 g boneless chicken breast or thigh, sliced

    • 2 tablespoons vegetable oil

    • 1 large onion, sliced

    • 2 garlic cloves, minced

    • 1 tablespoon fresh ginger, grated

    • 2 bell peppers (red and green), sliced

    • 2 tomatoes, chopped

    • 2 tablespoons tomato paste

    • 1 teaspoon ground cumin

    • 1 teaspoon ground coriander

    • 1 teaspoon turmeric

    • 1 teaspoon garam masala

    • 1 teaspoon chilli powder (adjust to taste)

    • Salt and black pepper to taste

    • ½ cup chicken stock

    • Fresh cilantro, chopped

    • Juice of ½ lemon

Instructions

Step 1 – Season the Chicken

Season the chicken pieces with salt, pepper, and a pinch of turmeric. This helps build flavour right from the start.

Step 2 – Sear the Chicken

Heat vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook for 4–5 minutes until lightly browned. Remove and set aside.

Step 3 – Cook the Aromatics

In the same pan, add the onion, garlic, and ginger. Cook for about 3 minutes until fragrant and slightly softened.

Step 4 – Add the Peppers

Stir in the sliced bell peppers and cook for another 2–3 minutes so they soften slightly but still keep their crunch.

Step 5 – Add the Spices and Tomatoes

Add the cumin, coriander, turmeric, chilli powder, and tomato paste. Stir well, then add the chopped tomatoes and cook for 2 minutes.

Step 6 – Create the Sauce

Pour in the chicken stock and stir to combine, forming a thick curry sauce.

Step 7 – Finish Cooking the Chicken

Return the chicken to the pan and simmer for 8–10 minutes until the chicken is fully cooked and coated with the sauce.

Step 8 – Garnish and Serve

Finish with garam masala, lemon juice, and fresh cilantro before serving.
