Jamie Oliver Chicken Balti

Jamie Oliver Chicken Balti is a fast-cooked curry made with chicken, spices, tomatoes, and herbs, typically cooked over high heat.

  • 400500 g chicken breast, sliced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon balti curry paste or powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can chopped tomatoes
  • ½ cup water or stock
  • Salt and black pepper to taste
  • Fresh cilantro
  • Juice of ½ lemon

Instructions

Step 1 – Cook the Base

Heat oil in a pan. Add onion and cook for 3–4 minutes until soft. Stir in garlic and ginger.

Step 2 – Add Spices

Add curry paste and spices. Cook for 1 minute to release aroma.

Step 3 – Cook the Chicken

Add chicken and cook until lightly browned.

Step 4 – Add Tomatoes

Pour in chopped tomatoes and a little water or stock. Stir well.

Step 5 – Simmer

Cook for 10–15 minutes until chicken is tender and sauce thickens.

Step 6 – Finish

Add lemon juice and fresh cilantro. Serve hot.
