You’ll need the following ingredients:

  • 4 chicken breasts or thighs
  • 1 cup cooked lentils (green or brown)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tablespoon olive oil
  • 1 cup chicken stock
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 tablespoon tomato paste
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lemon

Instructions

Step 1 – Season the Chicken

Pat the chicken dry and season both sides with salt, pepper, and paprika. This helps build flavor from the beginning.

Step 2 – Sear the Chicken

Heat olive oil in a large pan over medium-high heat. Add the chicken and cook for 4–5 minutes per side until golden brown. Remove from the pan and set aside.

Step 3 – Cook the Vegetables

In the same pan, add the onion, carrot, celery, and garlic. Cook for about 3–4 minutes until softened and aromatic.

Step 4 – Add Lentils and Seasoning

Stir in the lentils, cumin, and tomato paste. Mix well so the lentils are coated with the spices and vegetables.

Step 5 – Pour in the Stock

Add the chicken stock and bring the mixture to a gentle simmer. Let it cook for 5 minutes so the lentils absorb the flavors.

Step 6 – Return the Chicken

Place the chicken back into the pan and cook for another 5–7 minutes until the chicken is fully cooked.

Step 7 – Finish and Serve

Add lemon juice and fresh parsley before serving. This brightens the flavors and adds freshness.
