Jamie Oliver Chicken and Chorizo Stew

Jamie Oliver’s Chicken and Chorizo Stew is a rustic stew made by browning chicken, frying chorizo to release its spices, and simmering everything with tomatoes, vegetables, herbs, and stock until rich and tender. It’s a simple but deeply flavourful dish inspired by Spanish cooking traditions.

    • 600g chicken thighs, diced

    • 150g cooking chorizo, sliced

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 1 red pepper, sliced

    • 1 yellow pepper, sliced

    • 2 medium potatoes, diced

    • 1 teaspoon smoked paprika

    • 1 × 400g can chopped tomatoes

    • 500ml chicken stock

    • Olive oil

    • Fresh parsley or coriander

    • Salt and pepper

Instructions

1. Brown the Chicken for Depth of Flavour

Season the chicken and brown it in olive oil until golden. Browning helps build a deep flavour base and keeps the chicken juicy through simmering.

2. Fry the Chorizo to Release Its Smoky Oils

Remove the chicken and cook the chorizo. As it fries, it releases bright red paprika oil that forms the foundation of the stew’s signature smoky taste.

3. Add Vegetables and Build the Stew Base

Add the onion, garlic, and peppers to the chorizo oil. Cook until the vegetables soften and absorb the smoky flavours.

4. Add Potatoes, Paprika, Tomatoes, and Stock

Return the chicken to the pan, then add potatoes, paprika, chopped tomatoes, and chicken stock. Stir well and bring everything to a gentle simmer.

5. Simmer Until Thick, Rich, and Tender

Cook for 30–40 minutes until the potatoes are soft, the sauce has thickened, and the flavours have melded beautifully. Adjust seasoning as needed.

6. Garnish and Serve

Finish with chopped parsley or coriander for freshness. Serve hot with crusty bread, rice, or mashed potatoes to soak up the rich stew.
