Pat the chicken dry using paper towels. Season both sides with salt and black pepper. Proper seasoning ensures the chicken develops rich flavor during cooking.
Heat olive oil and butter in a large frying pan over medium heat. Add the chicken and cook for 5–6 minutes per side until golden brown. Remove from the pan and set aside.
In the same pan, add the sliced red onion and minced garlic. Cook for about 2–3 minutes until softened and fragrant.
Stir in the fresh blueberries and cook gently for 2 minutes. Some of the berries will start to burst, releasing their natural juices.
Pour in the chicken stock and balsamic vinegar. Add the thyme and honey if using. Stir well and allow the mixture to simmer for 3–4 minutes until slightly thickened.
Place the chicken back into the pan and spoon the blueberry sauce over it. Let it cook for another 6–8 minutes until the chicken is fully cooked and coated in the sauce.
Sprinkle fresh parsley over the top and serve the chicken with plenty of the blueberry sauce.
