Jamie Oliver Chicken and Blueberries is a pan-seared chicken dish finished with a lightly sweet blueberry sauce. The blueberries cook down with herbs and a splash of stock or vinegar to create a rich, glossy sauce that coats the chicken beautifully.

You’ll need the following ingredients:

    • 4 boneless chicken breasts or thighs

    • 1 cup fresh blueberries

    • 2 garlic cloves, minced

    • 1 small red onion, finely sliced

    • 1 tablespoon olive oil

    • 1 tablespoon butter

    • ½ cup chicken stock

    • 1 tablespoon balsamic vinegar

    • 1 teaspoon fresh thyme leaves

    • ½ teaspoon salt

    • ½ teaspoon black pepper

    • 1 tablespoon honey (optional for sweetness)

    • Fresh parsley for garnish

Instructions

Step 1 – Season the Chicken

Pat the chicken dry using paper towels. Season both sides with salt and black pepper. Proper seasoning ensures the chicken develops rich flavor during cooking.

Step 2 – Sear the Chicken

Heat olive oil and butter in a large frying pan over medium heat. Add the chicken and cook for 5–6 minutes per side until golden brown. Remove from the pan and set aside.

Step 3 – Cook the Aromatics

In the same pan, add the sliced red onion and minced garlic. Cook for about 2–3 minutes until softened and fragrant.

Step 4 – Add the Blueberries

Stir in the fresh blueberries and cook gently for 2 minutes. Some of the berries will start to burst, releasing their natural juices.

Step 5 – Create the Sauce

Pour in the chicken stock and balsamic vinegar. Add the thyme and honey if using. Stir well and allow the mixture to simmer for 3–4 minutes until slightly thickened.

Step 6 – Return the Chicken

Place the chicken back into the pan and spoon the blueberry sauce over it. Let it cook for another 6–8 minutes until the chicken is fully cooked and coated in the sauce.

Step 7 – Garnish and Serve

Sprinkle fresh parsley over the top and serve the chicken with plenty of the blueberry sauce.
