Jamie Oliver cheese puffs are small baked savoury pastries made from choux dough mixed with grated cheese.
They are similar to French gougères and are known for their light texture, golden crust, and rich, cheesy flavour.
Preheat the oven to 200°C (180°C fan). Add the butter, water, and a pinch of salt to a saucepan and bring to a gentle boil. Once the butter has fully melted, remove from the heat.
Add the flour all at once and beat vigorously with a wooden spoon. Return the pan to low heat and cook the mixture for 1–2 minutes until it forms a smooth dough that pulls away from the sides of the pan. This step removes excess moisture and helps the puffs rise.
Remove the pan from the heat and allow the dough to cool slightly. Beat in the eggs one at a time, mixing well after each addition, until the dough becomes smooth, glossy, and pipeable.
Stir in most of the grated cheese, reserving a small amount for topping. Add black pepper or mustard powder if using, mixing until evenly distributed.
Spoon or pipe small mounds of dough onto a lined baking tray, leaving space between each puff. Sprinkle the tops with the remaining cheese for extra flavour and colour.
Bake for 20–25 minutes until the puffs are well risen, golden, and crisp. Avoid opening the oven door too early, as this can cause them to collapse.
Remove from the oven and allow to cool slightly before serving. The centres should be light and airy, with a crisp outer shell.
