    • 1 sheet shortcrust pastry

    • 2 large onions, thinly sliced

    • 2 tablespoons butter

    • 1 tablespoon olive oil

    • 200 g cheddar cheese, grated

    • 2 eggs

    • ½ cup milk or cream

    • 1 teaspoon mustard (optional)

    • Salt and black pepper to taste

    • Fresh thyme or parsley (optional)

Instructions

Step 1 – Prepare the Pastry

Preheat your oven to 180°C (350°F). Roll out the pastry and line a pie dish, pressing it gently into the edges.

Step 2 – Cook the Onions

Heat butter and olive oil in a pan over medium heat. Add the sliced onions and cook slowly for 15–20 minutes until soft, golden, and slightly caramelized.

Step 3 – Prepare the Filling

In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the grated cheese and cooked onions.

Step 4 – Assemble the Pie

Pour the filling into the prepared pastry case. Spread it evenly.

Step 5 – Bake the Pie

Place the pie in the oven and bake for 30–35 minutes until the filling is set and the top is golden.

Step 6 – Rest and Serve

Allow the pie to rest for 5–10 minutes before slicing. This helps the filling firm up for clean slices.
