Jamie Oliver’s Cauliflower and Broccoli Soup is a simple vegetable-based soup made by simmering cauliflower, broccoli, onion, and garlic until tender, then blending everything into a silky, flavorful bowl. It’s a flexible, comforting recipe that works for any season.

    • 1 medium cauliflower, cut into florets

    • 1 medium broccoli head, cut into florets

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 1 large potato, peeled and diced

    • 1 litre vegetable or chicken stock

    • 2 tbsp olive oil

    • Salt and black pepper, to taste

    • ½ cup milk or cream (optional, for extra creaminess)

    • Fresh herbs (parsley or chives), for topping

Instructions

Step 1: Sauté the Aromatics

Heat olive oil in a large pot and sauté the chopped onion and garlic until soft and fragrant.

Step 2: Add the Vegetables

Add cauliflower, broccoli, and potato to the pot. Stir gently to coat the vegetables with the aromatics.

Step 3: Pour in the Stock

Add the stock and bring it to a gentle boil. Reduce heat and let it simmer for 15–20 minutes until all vegetables are tender.

Step 4: Blend Until Smooth

Use a hand blender or countertop blender to blend the soup until smooth and creamy.

Step 5: Adjust Seasoning

Stir in milk or cream if using, then add salt and pepper to taste. Simmer for another 2 minutes.

Step 6: Serve Hot

Dish out the soup into bowls and top with herbs, fresh pepper, or a drizzle of olive oil.
