Jamie Oliver Cauliflower and Broccoli Soup

Jamie Oliver’s Carrot and Lentil Soup is a simple blended soup made with fresh carrots, red lentils, onions, garlic, and warm spices. The ingredients simmer together until soft, then blend into a smooth, nutty, and comforting bowl of goodness.

    • 500g carrots, peeled and sliced

    • 1 cup red lentils, rinsed

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 1 potato, diced (optional for extra creaminess)

    • 1 litre vegetable or chicken stock

    • 1 tsp ground cumin

    • 1 tsp turmeric

    • 2 tbsp olive oil

    • Salt and black pepper, to taste

    • Lemon juice, for finishing

    • Fresh coriander or parsley for garnish

Instructions

Step 1: Sauté the Aromatics

Heat olive oil in a large pot and cook the onion and garlic until soft and fragrant.

Step 2: Add Carrots and Spices

Stir in the sliced carrots, cumin, and turmeric. Cook for a minute to coat the vegetables in the spices.

Step 3: Add Lentils and Stock

Add the washed red lentils and pour in the stock. Stir well to combine.

Step 4: Simmer Until Soft

Bring to a boil, reduce heat, and simmer for 20–25 minutes until the carrots and lentils are tender.

Step 5: Blend the Soup

Use a hand blender or countertop blender to purée the soup until smooth. Adjust thickness by adding more stock if needed.

Step 6: Adjust Flavor

Season with salt, pepper, and a squeeze of lemon juice to brighten the flavors.

Step 7: Serve Warm

Ladle the soup into bowls and garnish with herbs or a swirl of olive oil.
