Jamie Oliver Black Forest Trifle

Jamie Oliver’s Black Forest Trifle is a layered dessert made with chocolate sponge, cherry compote, rich custard, and whipped cream. It’s a deconstructed twist on the classic Black Forest gateau, assembled in a trifle dish for a creamy, fruity, and chocolatey finish.

Ingredients

    •  chocolate sponge cake or brownies, cut into chunks

    • 1 jar cherry compote or cherry pie filling

    • 200g dark chocolate, grated or shaved

    • 600ml custard (homemade or store-bought)

    • 400ml double cream

    • 3 tablespoons icing sugar

    • 1 teaspoon vanilla extract

    • 100g fresh cherries (optional, for garnish)

    • 23 tablespoons black cherry syrup or cherry juice (optional)

Instructions

1. Prepare the Cake Layer

Cut the chocolate cake or brownies into bite-sized pieces. If using kirsch, drizzle a little over the sponge to add depth and moisture.

2. Add the Cherry Layer

Spoon the cherry compote evenly over the cake chunks. Allow the juices to soak in slightly for extra flavour.

3. Add the Custard Layer

Pour the custard gently over the cherries, spreading it evenly to create a smooth, creamy layer.

4. Whip the Cream

Whip the double cream with icing sugar and vanilla until soft peaks form. Avoid over-whipping to keep it light and airy.

5. Add the Cream Layer

Spoon or pipe the whipped cream over the custard to create a fluffy final layer.

6. Finish With Toppings

Sprinkle dark chocolate shavings on top and add fresh cherries for a beautiful finish.

7. Chill Before Serving

Refrigerate for at least 1–2 hours to help the layers set and the flavours meld together.
