  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 150 ml chicken stock

Instructions

Step 1: Brown the Chicken First

Heat olive oil in a large skillet over medium-high heat.

Season the chicken lightly with salt and pepper.

Place chicken in the pan and cook for 4–5 minutes per side until golden.

Browning creates a flavourful base for the sauce.

Step 2: Cook the Mushrooms Properly

Remove chicken temporarily and add sliced mushrooms to the same pan.

Cook over medium heat until mushrooms release moisture and begin to brown.

This step concentrates their earthy flavour.

Step 3: Add Garlic and Deglaze

Stir in minced garlic and cook for about 30 seconds.

Pour in chicken stock and scrape any browned bits from the pan.

These caramelised bits add depth to the sauce.

Step 4: Simmer the Chicken

Return chicken to the pan and reduce heat.

Cover and simmer for 15–18 minutes until chicken is fully cooked.

The sauce should reduce slightly and coat the chicken.

Step 5: Finish and Serve

Taste and adjust seasoning if needed.

Sprinkle fresh thyme or herbs on top before serving.

Serve hot with your favourite side dish.
