Instructions

Step 1: Prepare the Base

Heat a large, heavy-based pan over medium heat. Add a little oil if needed, then add the sliced onion. Cook gently until softened and lightly golden. This forms the flavour base and adds natural sweetness.

Step 2: Add the Curry Paste

Stir in the curry paste and cook for a minute until fragrant. This step wakes up the spices and allows them to coat the onions evenly without burning.

Step 3: Brown the Lamb

Add the lamb to the pan and stir well so it’s coated in the spiced onion mixture. Cook briefly until the lamb begins to colour on the outside. This adds depth and seals in flavour.

Step 4: Add Tomatoes and Simmer

Pour in the chopped tomatoes and stir to combine. Lower the heat, cover loosely, and allow the curry to simmer gently for 45–60 minutes, stirring occasionally, until the lamb is tender and the sauce thickens.

Step 5: Finish with Yoghurt

Lower the heat further and stir in the yoghurt gently. This softens the spices and adds creaminess without overpowering the curry. Taste and adjust seasoning if needed.

Step 6: Rest Before Serving

Remove from the heat and let the curry rest for a few minutes. This helps the flavours settle and improves the overall balance.
