Jamie Oliver’s 5-ingredient chicken soup is a straightforward homemade soup made using chicken, a small selection of vegetables, and stock or water.
The focus is on gentle simmering and letting natural flavours develop without heavy seasoning or long cooking times.
Peel and roughly chop the onion, carrot, and celery. If using a whole chicken, remove any excess fat but keep the skin for flavour.
Place the chicken in a large pot and add the chopped vegetables. Pour in enough stock or water to fully cover everything.
Bring the pot to a gentle boil, then reduce to a simmer. Cook uncovered for 25–30 minutes, skimming off any foam from the surface.
Remove the chicken from the pot. Shred the meat, discarding skin and bones, then return the meat to the soup.
Season lightly with salt and black pepper. Taste and adjust, then serve hot.
